I love, love, love, love, LOVE this pan! It heats evenly and quickly, and clean-up is a breeze. I only have two people to cook for on a regular basis (me and the boyfriend), so it's perfect for everyday. I can make chicken picatta for 4 in this too when friends come over (any more than 4 servings I usually bust out the one huge pan I have - also a Calphalon)

The handles are the best part - I hate maneuvering long handles when trying to wash dishes or fit everything into my tiny cupboards so this pan is a dream come true.

Before I get to the Everyday Pan...I just have to say that I LOVE the Calphalon Contemporary Stainless line!! It is a gorgeous, sleek and sexy (yes, pots and pans can be sexy!) set of cookware and it entices the owner to be creative and imaginative!! Of course, Calphalon has phenomenal products and this is no exception!

Ever buy a pot or pan in the store and then wonder what you can cook in it? Well Calphalon in their never-ending quest to be the best solves that problem with this line!! Enclosed in every package is a recipe card containing a recipe designed exclusively for use with the pan or pot you just purchased!! Is that ingenious or what?

OK, enough of my gushing for Calphalon...now my review.

Remember that sexy comment? Well, that's how I bought my first pot in this line - I saw it and thought what a gorgeous, incredible pan...and promptly purchased it.

It has been one of the best decisions I have ever made, here's why:

1) The pot's rounded bottom and sides fit perfectly on the burner and provide an all over even heat, which means, the top of the pot will be as hot as the bottom, so your food cooks through from all sides (meaning I don't have to stand there and constantly turn, flip and stir unless the recipe calls for that).

2) One piece construction (no bottom heating core) means there is nothing which in years to come will loosen from the main section of the pot and allow water (and other nasties) to seep in and slowly erode the core from the bottom of the pot. I've had several stainless steel cookware sets over the years and no matter what the manufacturer tells you, eventually (unless you only use it once or twice a year to cook), eventually that bottom piece falls off the pan or separates and water gets in there. There's nothing like heating up your pot on the stove and seeing the water in the bottom core boiling in addition to the water IN the pot!! If you're not sure what the bottom core is, check out lines like the Wolfgang Puck Bistro and Emeril Ware's Stainless Steel & Copper. See that bottom piece? I guarantee you, it will eventually start separating...especially if you use your pots every day.

3) Clear-Glass See-Through Lids...need I say more? You can see exactly what is going on without opening up and letting the heat/steam escape! And unlike some sets I used (read Ultrex, perhaps that's also why they are o longer in business), the condensation which cascades down the sides of the lid and back into the pot does not cause the outer edge of the rim to become discolored and speckled with air bubbles. After a couple of years, my Ultrex pot lids were all speckled with air bubbles which had gotten trapped under the glass and the edge (don't know how).

4) Handles (especially on the frying pans in this set). The handles on the pots and pans in this set are fantastic. I used a gas range for cooking and if you use hollow-handled stainless steel pots, you've probably burned your hands when you gripped the handle and realized that because it is a hollow handle, the handle was as hot as the pot!! Well, Calphalon's handles because they are solid, do not heat up as hot as the pot (yes, they will get a little warm, it is a stainless stele pot after all), but it will not give you a third-degree burn if you forget to use the kitchen mitts.

5) Clean-up is a breeze - use Barkeeper's Friend and a Dobie scrubber and you're good to go. The two together will keep your pans shiny and sleek (yeah, sexy too!) and will ensure that the finish does not get scratched. Don't use steel wool inside or outside - it will eventually scratch the finish on your pans.

Overall, I have never been so pleased with a set of pots in my entire life!! Calphalon has made a wonderful product and hopefully will continue to add pieces to the line.

By the way, I buy my pots singly (not in sets) so that I can build exactly the set I need based on the way I cook. For this set, I have the 12-in and 10-in frying pans, the Everyday Pot, 2 3.5-quart sauce pans, 2 2-quart saucepans and 4 1-quart saucepans.

Nice size, bit hard to clean (2010-02-25)
This is a nice, medium-sized pan for everyday use. With a little butter or oil, even eggs don't stick if you cook at low to moderate heat. It heats well and evenly. Does steaks as well as pancakes, vegetables. Cleaning can be a bit difficult, though. A stainless steel cleaner like the ones recommended in the pan's literature work, but it's hard to clean the rim's indentation at the top and around the bolts attaching the handles. I would purchase it again or others like it.

Love this Little Pan (2010-02-16)
I have a wide range of Calphalon Contemporary cookwear plus several cast iron fry pans and dutch oven. The Everyday Pan is the pan that gets the most use. This pan isn't meant for every job in the kitchen, it's great for smaller jobs: 2 or 3 eggs, skillet dinners for 1 or 2, sauteed shrimp or pan-seared fish for 2, or a spontaneous grilled-cheese sandwich. I used it to make an egg frittata for four large appetites, and had left-overs. It goes easily from stove-top to oven (or broiler), and looks sleek on the table.

One reviewer didn't like the pot handles because they get hot (they do); however the little pot handles are also its greatest asset - it's the handles that make it so versatile. With a more traditional handle, it would be just another fry pan.

I want Calphalon to make one exactly like it in a 12" size.
